Bosslady Noodle Barwas a restaurant by Archie McLeish, Bash Redford and me. The intention of theproject was to bring a simple taste of home, Hong Kong style beef brisketnoodles to London.
My role was to runthe day-to-day operations of the business, to cook and prep for services and todesign brand related tasks with Archie.
The inspiration camefrom the proprietor of a famous noodle shop in Tai Po, Hong Kong, where I’vefrequented since I was 8 years old, which unfortunately shut earlier this yearafter many years of service. The name “Bosslady” comes from a Hong Kong slangfor ladies often running restaurant businesses and possessing a toughpersonality. Bosslady aimed to give Londoners a casual yet hearty approach to the food we Hong Kongers know and love.
事頭婆麵館是我與 Archie McLeish 和 Bash Redford 合作創辦的一家餐廳。這個項目的初衷很簡單——想把一碗家的味道,也就是港式牛腩麵,帶到倫敦去。
我負責餐廳的日常運營、備料與烹飪工作,同時也與 Archie 一起參與品牌設計等相關事務。
這家餐廳的靈感來自香港大埔一家著名的牛腩麵店老闆娘——那是我從八歲起就常去的地方。可惜這家店在經營多年後於今年年初結束營業。「事頭婆」這個名字取自香港俚語,用來形容那些經營餐飲生意且性格堅毅的女性。事頭婆麵館希望為倫敦人帶來一種輕鬆而溫暖的飲食體驗,讓他們感受到我們香港人熱愛美食的態度。
